Cereals play a major role in the total nutritional balance

The most important change that has occurred in our eating habits during the transition from a traditional diet to our contemporary Western diet has been an inversion of energy sources. Based initially on a preponderance of cereals, the sources of energy have evolved towards an increasingly high lipid intake. However the nutritional advantages of cereals are obvious: they provide a source of complex carbohydrates, proteins and essential nutrients, fibres, etc. Even if cereals have been cultivated for centuries, technological challenges remain: breeding wheat varieties, cultivating and harvesting conditions, transformation and consumption. The questions posed to researchers are numerous and important because cereal consumption represents the basis of our diet not only because cereals are sources of energy, but also because they play a major role in the total nutritional balance.
